German and German-style Weissbier are pale in color, spicy (clove), fruity (banana), and refreshing. They taste soft and bready from the wheat malt which makes up 50 or more percent of the grain bill. The remaining malt is normally high quality Pilsner malt. Hop flavor and aroma are low to none. Bitterness is low. In addition to the classic banana flavor characteristic, vanilla and even bubblegum can peak through. The spiciness is a classic clove flavor. They look pale, and can be very hazy to crystal clear depending on the sub style. They should have a thick, white, fluffy head on them. The long lasting foam stand is attributed to the high percentage of protein in wheat malt. They are medium in body, never full, yet highly carbonated. Expect true to style Weissbier to have an average of 5% alcohol by volume. Classics include: Weihenstephaner Hefeweissbier, Schneider Weisse, Paulaner Hefe-Weizen, Hacker-Pschorr Weisse and of course Franziskaner Hefe-Weisse, which Beer Engine has been featuring well over a year now.
